Pancakes have always been a favourite of mine since I was a child, this recipe is a great healthier version and contains no flour so is a good gluten free option.
- 1 serve of protein powder (pea or whey)
- 1 tbsp of almond or hazelnut meal
- 30ml water
- 1 egg
- 1 tbsp ricotta cheese
- 1/2 cup of berries
Mix all ingredients in the bowl (except the berries and ricotta). If you need to add a little more water to make the consistency smoother you can just don’t make it to runny.
In a non stick frying pan on moderate heat (or add a little coconut oil in an normal frying pan) add ½ a soup ladel/ ice cream scoop of the mixture. Watch it closely as it may burn quickly. Cook approximately 2 minutes each side.
Once cooked serve with the ricotta and berries.
