This is a great alternative to traditional tabouleh especially if you are avoiding gluten or grains altogether. Parsley is a great herb that is quite cleansing to the palate, it is rich in vitamins a and c, magnesium, iron, folate and manganese.
- 1 handful of flat leaved parsley
- 1 small handful of mint
- 1 spring onion stick
- 1 lebanese cucumber
- 1 tomato
- 1 lemon
Rinse all ingredients, then chop all ingredients except for the lemon.
Combine into a bowl and squeeze the juice of a lemon over the salad and serve.
