Avocados are a great source of essential fatty acids (majority monounsaturated fats), potassium and folate. Garlic is great for its antioxidant and antibacterial properties. Lemons are rich in vitamin C, aids in the digestive processes in the stomach and the juice is alkalising to your body.
- 1 whole ripe avocado
- 1 clove of garlic, squashed then minced or thinly chopped
- 1 tablepsoon of freshly squeezed lemon juice
- 1 cucumber
- 1 red capsicum
- 1 carrot
Cut open the avocado and scoop the entire contents (minus the pip) into a bowl and mash with a fork. Mix in the garlic and lemon juice thoroughly until you get a nice dip consistency.
Wash and cut up your cucumber, red capsicum and carrot into sticks.
Serve your vegetable sticks with your dip. You can store your dip and veggie sticks in an airtight container for 1-2 days.
