Kale is a green superfood as it is packed with minerals like magnesium, calcium, vitamin A,C and K.
Kale chips are a great alternative to the old potato chip as they still have the crunch and salty taste just loaded with nutrients and are without the dreaded trans fatty acids that normal potato chips contain.
- 1 bunch of Kale (flat leaf is easier) or if you need more iodine in your diet use nori sheets
- 1 tablespoon of olive oil
- A pinch of pink Himalayan salt
Cut your Kale leaves from the bunch, then cut along the thick stem in the middle and discard the steam.
Cut the kale into ‘potato chip sizes’ then drizzle with olive oil.
Place on a baking tray and sprinkle the pink salt over the leaves.
Place under the grill or in an oven at 180 degrees Celsius for about 10 minutes or until crispy.
